Homemade Chicken Enchiladas!


I absolutely love my Chicken Enchiladas Recipe!
Cheap, easy, and fun family activity!

Ingredients:
2-4 lbs Boneless Skinless Chicken Breasts
2- 10.65 oz cans Cream of Chicken
3/4 Cup Milk
1 Can Green Chile Enchilada Sauce
10-15 Burrito Size Tortillas
Cheddar Cheese

Directions:
First Boil the chicken, then cool, and shred. 
Place Enchilada Sauce in the bottom of Large Casserole Pan
Mix cream of chicken and milk, and take small spoon and layer in tortilla and spread.
then add small handful of chicken and cheese into tortilla, roll like burrito, and place in dish, 
repeat until casserole dish is full, and then pour cream of chicken mixture over enchiladas, and cover with cheese.
Pre-Heat oven to 375, and bake for 35 minutes, or until bubbly.

Welcome To Our Garden!


Yesterday we spent all day, outside finishing the garden area at our house.
It was a chore, but we really like how it turned out! 
Several hours of work went into weeding, planting and shopping!

I don't have a before picture of our garden, but just visualize, the next pic covered in weeds, ugly bushes and sticks, and grass. 


Considering how it looked before, We are proud of our work we have done!
It's clean and it has pretty flowers in it! lol. 


This is a picture of our Painted Daisies, and our new hanging solar light!
At night it looks like a crystal ball,
or like the bottom of a swimming pool on a bright sunny day!

Needless to say, we are happy with the way it turned out!

Star Gazing!


Justin and I, love Spring time.
We spend a lot of time outside, instead of watching T.V.

Last night we laid a blanket down in our front yard, and decided to Star Gaze!
The first we saw was the big dipper! 
And then the little dipper! We couldn't see anything else,
So we decided to get out the ENCYCLOPEDIA!

We spent an hour or so, looking through the book, and up to the sky. 
Which also got us thinking, we would love to have a Telescope!
So maybe, one day we will! 

It was nice to just lay outside, and see a clear sky full of stars!

Temple Square

We love visiting Temple Square, no matter how many times you visit Temple Square, there is always something new to see!


I especially love Temple Square during Spring!
Nothing better than a beautiful spiritual building, and TULIPS!


I never realized, the detailing on the doors to The Salt Lake Temple! 
It is amazing to me, that all the decor, and detail that went into the Temple, was done over 100 years ago!


Next month marks our 2 year anniversary!
Amazing how time FLIES! 
Every time we visit Temple Square, It reminds me of that day!
So I take pictures, for reminders, of the time since!


We never got close ups, of our rings on the door knobs!
So, this is a tradition, in my family on our wedding day! 
And I have always wanted one, with my new ring!

New Recipe!

SLOW COOKED MAC N' CHEESE!!! 


Slow Cooked Macaroni & Cheese
Prep Time: 15 mins
Cooke Time: 3 hours 30 mins
Total Time: 3 hours 45 mins
Serves: 6
Ingredients
  • 8 ounces medium shell macaroni
  • 2 teaspoons olive oil
  • 1 cup evaporated milk
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cups (8 ounces) shredded sharp Cheddar cheese or a Cheddar blend
  • 4 tablespoons butter, melted
Directions
  1. Cook the macaroni following package directions. Drain in a colander and rinse with hot water. Drain well.
  2. Generously butter the sides and bottom of a 3 1/2- to 4-quart slow cooker (I use about 2 tablespoons of butter).
  3. Combine the macaroni with the remaining ingredients in the slow cooker and blend well. Cover the slow cooker and cook on LOW for 2 1/2 to 3 1/2 hours, stirring a few times.
  4. If desired, spoon the cooked macaroni and cheese mixture into a baking dish, sprinkle with a little more cheese, and put under the broiler for a minute or 2, just until cheese is melted.
  5. When the macaroni and cheese is done, feel free to spoon into a baking dish, top with a little more cheese, and put under the broiler for a minute or two for that “fresh from the oven” look.
Notes
You can use gluten free pasta if necessary
